Default Colors of jpgs in Word are not consistent with actual RGB set on Photoshop

I'd appreciate any advice on the following...

I create an image in Photoshop, e.g. a company logo. The company logo has a specific RGB color.

I then insert this logo in the header of a Word doc.

When I use a color picker to detect the color of the logo I've just inserted, it does not produce the same RGB value.

Note - I have already double clicked in the header area in the Word doc. I appreciate already that the header can not be in background mode.
