Is it possible to do a probability tree diagram in microsoft word 2010

Yes, you could create such a diagram using Word's Authoshape objects, but you'd probably be better off doing it in Visio or something equivalent.

Is it possible to control the precise angle that you put the lines at in Word's Shapes?

Yes, to within 1 degree. You can also control the height and width to within 1 twip. This is all done from the Drawing Tools tab that appears when you have a shape selected.
