As part of a college assignment I have to design a rack diagram for a SOHO network consisting of 2 server racks, 3 switches and 2 internet connections. Any advice on what equipment I should display in each rack?

Well, not knowing what the SOHO network consist of, it would be difficult to know exactly what is required. However, I will point you to a site that has a great selection of stencils for Visio that will help you out. Those sites are:

Within those two sites you should be able to get what you need for your assignment.
