Which Version is used most
I need to take an updated class.. last I had was a 2007 version. They offer 2010 and 2016, not knowing who will hire me and what version they use, what are your suggestions on which version I should take? |

If you are working with clients you need to be "fluent" in all versions AND have them to work on.

That's rather overstating the case. One only needs to be aware of what features are available in each version used by a given client; Office 2010 & later all have essentially the same Ribbon structure - and even the change from Office 2007 was minor.

Depends what you do of course but there are changes in the 2013 and 2016 ribbon structure which we need to consider in our code and 365 is making changes weekly in some cases. Others may not.
