Default international characters disappearing in incoming mails

I use Outlook 2007.

Often, but not always, diacritics (like é, à, ç) are completely removed from incoming e-mails. French words like "été" or "déjà" turn into "t" or "dj" and a word like "à" disappears completely, making for difficult reading and understanding of such mails.

I have not been able to find a setting that can remove this problem.
