Default Windows 7 gone mental

I single click and Microsoft turns it into a double click. If I click on a folder it opens it. Click on an open document anywhere and it makes it full screen. This is driving me nuts.

It's not clear from your post whether you're describing Windows problems or Office problems. Have you tried repairing the Office installation (via Windows Control Panel > Programs > Programs & Features > Microsoft Office (version) > Change > Repair)?
